Apple, bacon, and cheddar are becoming one of my most favorite pizza combinations. What’s interesting to me is that this pizza turns out different each time I make it. Check out this post from November 2011 and another from October 2012. Two different strategies make this version stand out from the others. First, my friend Sara showed me how to slice the onions super thin, making caramelizing easier. Second, rather than putting the toppings on one topping at a time we added them more randomly. This made for nice flavor distribution and nice presentation. This apple, bacon, and cheddar recipe is sweet and savory, and so delicious!

Notes: The 31st Annual Downtown Ithaca Apple Harvest Festival inspired this pizza. I picked up some fresh apples from the friendly students at Cornell Orchards and knew I had to make a pizza. After a quick stop at GreenStar Natural Foods Market for some organic ingredients I was ready to assemble. A light spread of Annie’s Goddess Dressing helped keep the dough from drying out. My husband said the flavors of the apples, onions, cheddar cheese, and sausage were an excellent combination.

Autumn is a season full of wonderful flavors. I especially love all foods that include apples. Last year I topped two different pizzas with apples. Both were good, but I wanted to try something different.

Now that I have successfully caramelized onions a couple of times, I decided to make them for this pizza. Along with the onions, I sauteed a Granny Smith apple and crisped bacon in the toaster oven. After pre-baking the dough, I sprinkled on cheddar cheese, then added the onions, apple and bacon. I let it bake until the cheese started to bubble.

The only things wrong with this pizza was that it was too small. It was so good! The cheddar cheese tasted amazing with the caramelized onions and apples. And bacon, it’s so good with anything. My apple, bacon and caramelized onion pizza recipe was a perfect fall dish!

#15: Big Blue Pizza Recipe 4/1/10

Continuing to branch out in my cheese selection, this week I took on blue cheese, the pungent cheese. Blue cheese is one of the few cheeses that Andrew does not like so I called on my friend Nicole to be my pizza guinea pig this week.

I did a little research on blue cheese and discovered there are many varieties, way more than I was aware of. The money saving cheese guy from Wegmans helped me pick out a tasty and affordable buttermilk blue cheese. This Wisconsin cheese is a three-time 1st place winner at the Wisconsin State Fair and two-time 3rd place winner at the World Dairy Expo so it must be good. I was feeling really adventurous this week and also included caramelized onions in this recipe. The onions didn’t get to the point of caramelizing, I wasn’t patient enough, but they did turn out quite good. Also included; a light sprinkling of mozzarella cheese, sautéed Granny Smith apple and baby spinach. The last topping to go on the pizza was the blue cheese.

After a few minutes in the oven, the pungent aroma quickly filled the kitchen and it was all you could smell once it was on the table. When I bit into a slice I could taste the other toppings, however the blue cheese was definitely the dominating flavor. The next time I use a strong cheese I will be sure to ease up on the quantity because a little goes such a long way, while a lot was way too much! Nicole, being such a supportive friend, took on the pungent pizza and said it was great! That’s true friendship!

#2: Apple, Bacon and Onion Pizza Recipe 1/9/10

We invited over our good friends Jenn, T and their three-year-old son. They didn’t have any pizza preferences so I decided to make a cheese pizza for their son, him being three and all, and an Apple, Bacon and Onion pizza I read about. This was a first time pizza for me. I used a Granny Smith apple, turkey bacon and a white onion. The cheese pizza was pretty good, but the Apple, Bacon and Onion pizza won the night!
